No Bake Oatmeal Cookies





Directions

2 c. sugar
1/2 c. milk
1/2 c. butter
4 Tbsp. cocoa

 3/4 c. peanut butter
 1 tsp. vanilla
 3 c. quick oats


Boil sugar, butter, milk, and cocoa for one minute. Remove from stove and add remaining ingredients. Drop by teaspoon onto waxed paper. Cool.

** Variations: One cup coconut may be added in place of 1 cup of oats (I always do this).

Chicken Tikka Masala




Meat
·         1.25 lbs boneless skinless chicken breast tenders

Sauce
·         2 tablespoons olive oil
·         4 garlic medium cloves, garlic pressed
·         1 small jalapeno, sliced into thin strips
·         1 small red pepper chopped
·         4 teaspoons coriander
·         2 teaspoon cumin
·         2 teaspoon paprika
·         2 teaspoon garam masala (Can be found at Harmon’s for sure)
·         1 teaspoon salt
·         1 (15 ounce) can tomato sauce
·         1 pint whipping cream
·         ¼ cup roasted crushed cashews
·         ½ cup chopped cilantro


Instructions

Sauce
Puree garlic, red peppers and jalapenos (blender or food processor will work, if not just chop as fine as you can)
Heat oil in pot (I use olive oil)
Add all spices at once and cook, stirring continuously, for one minute
Add garlic, red peppers and jalapenos and sauté for 5 minutes
Add tomato sauce and simmer/thicken for 20 minutes, stirring occasionally
Add cream and chicken and continue to simmer/thicken for 10 minutes
Stir in cashews and cilantro and serve (I do not like the cashews but you may)


Notes
*This recipe came from my friends David and Brandi Hellewell. 

I just used red-pepper flakes instead of whole peppers. I also added in onions and bell peppers (because those are SO GOOD). 

The Garam Masala spice took me a while to find. I just had to keep an eye out in the spice section of every store I went into. Finally found some at maceys one day.
